At last, after a cold and blowy winter, we’re chuffed to bring you our new menu must-haves for Spring/Summer 2018. You’ll find all you need to give your menu the seasonal kick it needs. From this season’s trends and original ideas to some old favourites and jaw dropping surprises (yeah, have a gander at those massive Wild Tiger Prawns - they're almost a foot long). These products will keep your customers talking all through the summer.

British North Sea Cod, caught by British boats and filleted in the UK into a generous J-cut. They’re boned, but the skin is left on for easy battering. Spot-on if you want to cut your own portions or if you’re looking for the ultimate fish & chip dish.

This is a trendy bit of seafood at the moment. Skinned and individually frozen, they’ve already been hand-scored. All you have to do is get them out of the freezer and work your magic on them. Simple and trendy - it doesn’t get much better than that.

These wild-caught Tiger Prawns are real whoppers - nearly a foot long which makes them more like Lobsters than Prawns. They’re frozen at sea for stunning quality and come with their heads on so they’re going to make a few jaws drop when you serve them.

Larger than your average King Prawn but with all of the lovely sweet flavour you’d expect. You won’t need as many of these when plating up but you’ll still be giving your customers something to talk about.

Not to be confused with Atlantic farmed Salmon. A totally wild fish which gets its vibrant red flesh and stunning flavour from its healthy diet of wild shellfish. Once landed, the fishermen freeze the product to lock in its freshness.

Here’s a great way to get Salmon on your menu, even when the purse strings are tight. Taken from the smallest, most abundant of the Pacific Salmon, it's a great alternative to its farmed cousin.

If you need a sensibly sized Salmon portion, these are a menu must-have. Skin-on, so they still look great, they’re perfect for those with a close eye on their margins or looking for a lighter dish.

This is a top-notch bit of Tuna. Caught by long line boats in the Pacific, and only the best Sashimi grade fish are chosen. It’s super frozen to -60C within an hour of being caught, which keeps the meat a rich red colour and with all the flavour of when it was caught. What's more it's completely safe to serve raw in the middle.

Exclusive to M&J. Sustainably caught, skinned and boned Cod topped with light mashed potato and hard cheese. Each one comes in its own ‘Easy-Bake’ paper packet that goes straight into the oven. A classic dish that’s going to save you loads of time in prep and will look great when it leaves the kitchen.

Lighter and with a looser texture than croquettes, croquetas are heading to be the next big thing. These little gems are packed with chunky pieces of smoked Haddock, mature soft cheese and chives. They’ve also got a lovely golden breadcrumb and crisp up perfectly when deep fried.

We’re seeing croquetas crop up on menus all over the place recently. These are filled with chunky flakes of Cod, Prawns and spicy chorizo, and coated in a beautiful golden breadcrumb. Perfect for a Pintxos style starter or platter dish.

A menu must-have, now in a larger, value pack size. A lovely, meaty Scampi that uses whole tails from Scottish Langoustines. Coated in crispy breadcrumbs and quick to deep fry.

The finest Langoustine tails wrapped in a wholegrain crumb with red and blond quinoa, brown linseed, amaranth seeds, and kibbled rye and oats. Sounds impressive on a menu but it’s the fantastic nutty taste and the sweet Langoustine that will keep it flying out of your kitchen.

Who’s not going to love these little beauties? Not only are they the first MSC accredited Blanchbait available in foodservice, but they’ve also been headed and gutted. No matter how you look at it, Blanchbait is going to be now more popular than ever.

Made with a light, crispy Japanese-style panko with a subtle lemon flavour, these firm, flaky pieces of MSC Cod are frozen at sea. This keeps their texture and taste as fresh as the day they were caught.

A straightforward traditional pickle made with slices of crisp cucumber in a spiced pickled liquor. It’s great with fish and chips and will add a spark of flavour to any fish and seafood casual dining dish.
