Filleting Instructions
With the back of your knife and by going from tail to head, carefully remove the scales.Remove the head, open the belly and remove the insides.
Inside the belly, place a knife on the top of thebackbone and cut through the ribcage, only ¾ of the way in, continue the cut to just past the anal fin.
Repeat the process on the second side.Taking a pair of scissors, trim out the backbone.Remove any rib bones.
